What are some of the causes for pasta checking after drying? We are running in the summertime in a hot and humid area with no climate control in the plant. Any recommendations?
Checking after drying is usually due to overly aggressive drying in the early stages. The pores close up and a tiny bit of moisture is trapped in the center. Either increase humidity or decrease temperature in your early drying phase (first hour).
